Strawberry Chicken Salad

Ingredients

  • Dressing:
  • 8 cups Romaine lettuce mixed with spinach
  • 2 1/2 cups sliced strawberries (2 pints)
  • 1 cup Monterrey Jack cheese, shredded
  • 1 cup caramelized pecans
  • 3 cups cubed grilled chicken
  • 1/2 cup vegetable oil
  • 1/2 cup sugar
  • 1/4 cup apple cider vinegar
  • 1/4 cup water
  • 1/2 tsp salt
  • 1/2 tsp paprika
  • pinch of white pepper

Preparation

Step 1

Mix all ingredients together and add dressing before serving -- either to entire bowl of salad or to each individual salad.

Caramelized pecans:

1 cup pecans
1/2 cup sugar
1/4 cup water Cook on high until sugar sticks to the pecans and the get crunchy. Burns easily!
