Summer Squash Casserole

Ingredients

  • 2 lbs. summer squash - sliced
  • 2 small onions - chopped
  • 2 carrots - coarsley grated
  • Mix
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • Melt
  • 1 stick margarine
  • Add
  • 1 small pkg. of sesasoned bread cubes

Preparation

Step 1

Cook vegetables until semi-tender. Drain and set aside.

Mix soup and sour cream. Add squash mixture to soup and sour cream mixture and set aside.

Melt margarine and mix with bread cubes. Stir to coat.

Grease 2 qt. casserole. Cover bottom with 1/2 bread cubes. Add squash mixture and top with remaining bread cubes.

Bake at 350 degrees for 30 minutes.
