WATERCRESS SALW WITH CHEVRE

Ingredients

  • 4 bunches watercress
  • 1 bunch frise lettuce
  • 1 tablespoon prepared mustard
  • 1/3 cup red wine or sherry vinegar
  • salt, pepper
  • 1 cup walnut oil
  • 1 cup pine nuts, toasted
  • 8 ounces goat cheese, cut into 1/2 cubes

Preparation

Step 1

Trim wash and dry watercress and lettuce; set aside. Combine mustard and vinegar with salt and pepper. Add walnut oil while whisking vigorously. Toss salad with vinaigrette. Sprinkle with pine nuts and goat cheese cubes. Serve immediately.
