Ingredients
- 1/3 cup (75 ml.) fresh lemon juice
- 1 tsp (5 ml) honey
- 1/2 tsp (2 ml) salt
- 1/4 cup (50 ml) olive oil
- 1/4 cup (50 ml) walnut oil
- 1/2 cup (125 ml) dried cranberries
- 1 cup (250 ml) diced celery
- 1 cup (250 ml) coarsely chopped toasted walnuts
- 1/2 cup (125 ml) finely diced red onion
- 2 19 oz. (540 ml) cans white beans, drained, rinsed
- Freshly ground black pepper to taste
Preparation
Step 1
1. To make vinaigrette, whisk together lemon juice, honey and salt. Drizzle in olive and walnut oils, whisking until emulsified.
2. Cover dried cranberries with very hot water and let soak 10minutes. Drain and reserve. Combine celery, walnuts and red onion with vinaigrette. Add cranberries and beans and stir very gently to combine. Season with salt and pepper. Serves 10
