Ingredients
- 1 cup wheatberries
- 2 cups diced cooked turkey meat
- 1/2 cup parsley, chopped
- 1/2 cup scallions, chopped
- 6 tablespoons extra-virgin olive oil
- 2 tablespoons balsamic vinegar
- Salt and freshly ground black
- pepper to taste
Preparation
Step 1
In a pot, place wheatberries with water to cover. Bring to a boil, lower heat, and simmer for 2 to 2 1/2 hours, or until tender. Drain and cool
In a bowl combine wheatberries with remaining ingredients and toss well. Serves 4 to 6.
