Deli Style Macaroni Salad

This is, without a doubt, the absolute best macaroni salad I have ever had...

Ingredients

  • 1 ¼ cups nonfat whipped salad dressing, such as Kraft Miracle Whip Myself, I use real Mayo...)
  • 2 tablespoons white-wine vinegar (I cut it back to 1 tbs)
  • 1 tablespoon Dijon-style mustard
  • ½ teaspoon salt
  • ¼ teaspoon fresh-ground black pepper
  • 1/2 pound elbow macaroni, cooked, rinsed under cold water and drained
  • 1 cup sliced celery (I skipped the celery)
  • ½ cup chopped green bell pepper
  • ½ cup chopped red bell pepper
  • ½ cup chopped red onion (I might add more than this next time)

Preparation

Step 1

1. In a medium glass or ceramic bowl, whisk together the salad dressing, vinegar, mustard, salt and pepper until combined.
2. Add the macaroni, celery, peppers and onion. Stir to combine. Cover and chill for 2 to 3 hours to enhance the flavor, serve cold.
