Ingredients
- 2 cloves garlic, crushed
- 4 boneless chicken breast halves
- 1/8 tsp salt
- 1/8 tsp black pepper
- 1 tbsp prepared pesto sauce
- 4 small hard rolls, split
- 3 plum tomatoes, sliced
- 1/2 cup (2 oz) shredded part-skim mozzarella cheese
Preparation
Step 1
1. Preheat oven to 350F. Rub garlic on all surfaces of chicken.
2. Spray medium nonstick skillet with cooking spray; heat over medium heat until hot.
3. Add chicken; cook 5-6 minutes on each side or until no longer pink in center. Sprinkle with salt and pepper.
4. Brush pesto sauce on bottom halves of rolls; layer with tomato. Place chicken in rolls; sprinkle cheese evenly over chicken.
5. Wrap sandwiches in aluminum foil; bake about 10 minutes or until cheese is melted.
