RASPBERRY PECAN THUMBPRINT COOKIES

I prefer raspberry with pecans but, you can use what ever combination of nuts and jams you prefer.

Ingredients

  • 1 lb. 4 oz. (4 cup) FLOUR
  • 12 oz. ( 2 cup) CHOPPED PECANS
  • 1 tsp. CINNAMON
  • 1/2 tsp. NUTMEG
  • 1/2 tsp. SALT
  • 1 lb. (2 cup) BUTTER, softened
  • 8 oz. (1 cup) BROWN SUGAR
  • 4 tsp. VANILLA
  • RASPBERRY JAM (or any flavor you prefer)

Preparation

Step 1

Combine flour, nuts & spices - set aside.
Cream butter until smooth.
Gradually beat in brown sugar and add vanilla.
Add in flour mixture until JUST combined.
Using small scoop (or walnut size balls), press thumb in center.
Fill with 1/2 tsp. jam.
Bake at 350 for 12-14 minutes.
