ROASTED SWEET POTATO MASH

Ingredients

  • 2 pounds sweet potatoes
  • 1/4 teaspoon powdered nutmeg
  • 1/4 teaspoon powdered cinnamon
  • 2 tablespoons maple syrup
  • 1 tablespoon extra virgin olive oil
  • 1 cup onion, diced
  • 1 cup frozen corn
  • 1 tablespoon fresh rosemary, finely chopped
  • Salt and black pepper to taste

Preparation

Step 1

Cook the potatoes on boiling water or roast in the oven. Put the potatoes through a potatoes ricer. Add the nutmeg, cinnamon and maple syrup.
In a saute pan, heat the olive oil and add the onion. When translucent, add the corn and rosemary. Saute for 3 to 4 minutes. In a large serving bowl, mix the potatoes and corn. Adjust seasonings with salt and pepper.
