Ingredients
- 1 cup packed fresh basil
- 1/4 cup pine nuts, toasted
- 1 1/2 tbsp. chopped, fresh garlic
- 1 tsp black pepper
- 1 tsp salt
- 3 tbsp olive oil
- 1/3 cup fresh grated Parmesan cheese
- Crostini (recipe follows)
- 1 1/2 lb. shrimp, peeled, deveined, cooked and cooled
- Black olive or red pepper pieces for garnish
Preparation
Step 1
Combine the basil, pine nuts, garlic, black pepper, salt, oil and Parmesan in food processor or blender. Process mixture to a smooth consistency.
Spread crostini with pesto sauce. Slice shrimp in half down the back. Layer shrimp on crostini and garnish with olive or pepper pieces. Makes about 20
