Shrimp with Pesto Appetizers

Ingredients

  • 1 cup packed fresh basil
  • 1/4 cup pine nuts, toasted
  • 1 1/2 tbsp. chopped, fresh garlic
  • 1 tsp black pepper
  • 1 tsp salt
  • 3 tbsp olive oil
  • 1/3 cup fresh grated Parmesan cheese
  • Crostini (recipe follows)
  • 1 1/2 lb. shrimp, peeled, deveined, cooked and cooled
  • Black olive or red pepper pieces for garnish

Preparation

Step 1

Combine the basil, pine nuts, garlic, black pepper, salt, oil and Parmesan in food processor or blender. Process mixture to a smooth consistency.
Spread crostini with pesto sauce. Slice shrimp in half down the back. Layer shrimp on crostini and garnish with olive or pepper pieces. Makes about 20
