CHICkEN AND CAPER CAESAR SALAD SPEARS

Ingredients

  • 1/2 cup mayonnaise
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tbsp fresh lemon juice
  • 1 tsp anchovy paste
  • 1 tsp Worcestershire sauce
  • 1/2 tsp dry mustard
  • 2 lb. cooked, boneless, skinless
  • chicken, cut into thin slices
  • 60 small romaine lettuce leaves
  • Capers and shaved Parmesan
  • cheese for garnish

Preparation

Step 1

In small bowl combine first seven ingredients. Place a few chicken slices on each lettuce leaf. Top with dressing, and garnish with capers and Parmesan shavings.
