Heather's Pesto Dressing

Ingredients

  • 2 cups fresh basil leaves
  • 1/2 cup flat-leaf parsley
  • 1/4 cup part-skim ricotta cheese
  • 3 tbsp grated Parmesan cheese
  • 3 garlic cloves, minced
  • 1/2 tsp freshly ground black pepper
  • 2 tbsp plain nonfat yogurt

Preparation

Step 1

1. In a blender or food processor, combine basil, parsley, ricotta cheese, Parmesan cheese, garlic, and pepper; puree until smooth. Transfer to small bowl with tight-fitting cover; stir in yogurt.

2. Refrigerate, covered, at least 2 hours. Stir before serving.
