Lemon-Glazed Gingersnaps

Ingredients

  • 2/3 cup + 2 Tbsp all purpose flour
  • 1/3 cup + 2 Tbsp whole wheat flour
  • 1 1/2 tsp ground ginger
  • 1/2 tsp ground cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp ground cloves
  • 1/4 tsp salt
  • 1/8 tsp freshly ground black pepper
  • 1/2 cup granulated sugar
  • 1/4 cup + 2 Tbsp 50/50 butter blend (ex. Smart Choice Balance)
  • 2 Tbsp molasses
  • 1 large egg white
  • 2/3 cup confectioners' sugar
  • 2 Tbsp. freshly squeezed lemon juice

Preparation

Step 1

Heat oven to 350 degrees
Whisk flours, ginger, cinnamon, baking soda, cloves, salt and pepper in bowl.
Beat granulated sugar and spread in medium bowl with electric mixer at medium speed until combined. Add molasses and beat until combined. Add egg white and beat until smooth. Add dry ingredients in thirds, beating until combined.
Drop batter by teaspoonfuls onto ungreased baking sheets, spacing 1" apart. Bake 10 minutes.
Mix confectioner's sugar and lemon juice in small bowl. Brush onto each cookie while warm.
