Tomato Soup

Ingredients

  • 1/2 cup diced onion
  • 1 tsp tomato paste
  • 1 Tbsp olive oil
  • 1 can tomatoes in juice (28 oz)
  • 1 1/2 cups chicken broth
  • 1/2 cup skim milk
  • Salt to taste
  • Chopped fresh chives

Preparation

Step 1

1. Cook onion and tomato paste in oil in a large pot over medium heat until onion softens, about 3 minutes.
2. Add tomatoes and broth; simmer 10 minutes.
3. Stir in milk and simmer 5 minutes
4, Puree with a hand blender
5. Season with salt and garnish with chives
