Shirley's Lime Cake

Heavy, moist and rich tasting, yet without a lot of eggs and you can use a low-cholesterol salad oil.

Ingredients
- Frosting:
- 1 package lime jello
- 3/4 c cold water
- 4 eggs
- 1 package yellow cake mix
- 1/4 cup oil
- dash of green food coloring (optional)
- Juice of 2 large limes
- 2 c sifted powdered sugar
- grated lime peel (zest only).
Preparation
Step 1
Beat jello, water and eggs together with electric mixer for 2 minutes
Add cake mix, oil and green food coloring. Beat for 1 minute more.
Pour into a prepared pan. Bake at 350 for 45 minutes or more, until cake tests done. While cake is still hot, prick holes in cake with a toothpick and pour frosting over it.
For frosting, mix all ingredients together until very smooth. Pour over cake.
