CHERIE’S PUMPKIN MUSHROOM SOUP

  • 1 pound mushrooms
  • 1 large onion
  • 2 quarts chicken broth
  • 2 tsp curry powder
  • 2 tsp honey
  • salt and pepper
  • 3 cups pumpkin
  • sour cream and chives

Preparation

Step 1

Saute 1 pound MUSHROOMS and 1 large ONION, sliced really thin in butter.

Add 2 quarts CHICKEN BROTH
2 tsp CURRY POWDER
2 tsp HONEY
S&P
3 cups PUMPKIN

Cook until onions disintegrate.

Stir in 2 cups ½ and ½ right before serving. Heat through, don’t boil.

Serve with dollop of SOUR CREAM and CHIVES
