Candied Yams

Ingredients

  • 2 # yams
  • 1/2 C brown sugar, packed
  • 3 T butter or oleo
  • 3 T light cream or milk
  • 1/2 t salt

Preparation

Step 1

Wash but do not pare yams. Heat enough salted water to cover yams (1/2 t salt to 1 C water) to boiling. Add yams. Cover and heat to boiling, cook 30/35 minutes till tender.
Drain. Slip off skins. Slice into 1/2" slices.
In medium skillet combine brown sugar, butter, cream and salt. Cook over medium heat stirring constantly till smooth and bubbly. Add yam slices, stir gently till glazed and heated through.

May be made one day ahead, refridgerated and re-heated in oven. Cover while baking.
