Ingredients
- BUTTER:
- 1 3/4 C FLOUR
- 1 1/2 C SUGAR
- 1 1/2 t CINNAMON
- 1 t NUTMEG
- 1/2 t BAKING SODA
- 1/2 t BAKING POWDER
- 1/2 t SALT
- 2 EGGS
- 1 C MASHED SWEET POTATOES
- 1/2 C CANOLA OIL
- 1/3 C WATER
- 1/2 C SOFTENED BUTTER
- 1 8OZ CAN CRUSHED PINEAPPLE, WELL DRAINED
Preparation
Step 1
IN LARGE BOWL,COMBINE FIRST 7 INGREDIENTS. IN SMALL BOWL, COMBINE EGGS, POTATOES, OIL AND WATER. STIR IN DRY INGREDIENTS JUST UNTIL MOISTENED.
TRANSFER TO A GREASED 9X5 PAN. BAKE AT 350* FOR 50-60 MINUTES OR UNTIL TOOTHPICK COMES OUT CLEAN. COOL IN PAN 20 MINUTES BEFORE REMOVING FROM PAN TO WIRE RACK.
IN SMALL BOWL, COMBINE BUTTER AND PINEAPPLE. SERVE WITH BREAD.
