Zucchini Soup

Ingredients

  • 1 medium onion, chopped
  • 2 tablespoons margarine
  • 1 tablespoon oil
  • 6 medium zucchini, peeled and chopped
  • 1 teaspoon salt
  • 1 tablespoon flour
  • 1/4 teaspoon pepper
  • 5 1/4 cups chicken broth

Preparation

Step 1

1. Saute onion in margarine & oil in large poy until tender.

2. Add zucchini & seasonings.

3. Stir in flour, cook 1 minute.

4. Stir in broth, bring to a boil and cook 5 minutes.

5. Cool then puree in blender.
