Ingredients
- 1 pound fresh spinach
- 1 teaspoon butter or margarine
- 3 scallions sliced
- 2 tablespoons chicken broth
- 1 tablespoon soy sauce
- 2 tablespoons low-fat ricotta cheese
Preparation
Step 1
1. Trim stems and coarsely chop spinach leaves.
2. Melt butter. Add scallions and cook over medium heat about 2 minutes. Add spinach, broth and soy sauce. Cover and cook stir often about 3-5 minutes
3. In a food processor puree spinach and liquid. Add ricotta and puree again.
