White Chicken Chili

Chicken Chili made with a chicken broth base rather than tomato base.

Ingredients

  • 1 tsp corn oil
  • 1 chopped onion
  • 2 cloves garlic
  • 1 tsp cumin
  • 1 tsp cayenne pepper
  • 2 whole chicken breasts chopped into small pieces
  • 1 15oz can white navy beans undrained
  • 1 15oz can garbanzo beans undrained
  • 1 4oz diced green chili's undrained
  • 2 chicken bouillon cubes
  • 1/4 cup Monterrey jack cheese grated

Preparation

Step 1

Saute oil, onion, garlic, cumin, pepper and chicken for 15 - 20 minutes. Combine it with all the rest of the ingredients in a crock pot. Cook on low 4 - 6 hours. Serve with additional shredded cheese, sour cream and tortilla chips.
