Fish Primavera

Ingredients

  • 2 tbsp. butter
  • 4 tbsp. lemon juice
  • 1/2 tsp. dried dill
  • 1/2 cup each: carrot strips, red pepper strips, zucchini strips
  • 4 fish fillets, 1-1 1/4 lbs. (500-625g)
  • 2 tbsp. Parmesan
  • 1/4 tsp. each: pepper, paprika

Preparation

Step 1

Melt butter in large dish for 40-60 seconds in microwave. Add 3 tbsp. lemon juice, dill and veggies. Toss to coat. Cover loosely with vented plastic wrap and microwave at high 2-3 mins. Sprinkle one side of each fillet with remaining lemon juice, then cheese and pepper. Roll fillets and arrange seam side down evenly spaced over vegetables. Cover loosely with vented plastic wrap and microwave at high 5-7 mins. or until fish is firm. Let stand 5 mins. before serving.
