Ingredients
- 1 1/4 cups all purpose flour
- 2 tablespoons superfine sugar
- 1/2 cup butter, cut into small pieces
- 1 tablespoon water
- 2/3 cup heavy cream
- 1/2 cup superfine sugar
- 4 eggs
- Zest of 3 lemons
- 3/4 cup lemon juice
- confectioners' sugar for dusting
- Fruit to decorate (optional)
Preparation
Step 1
Sift flour into a bowl and add sugar. Add butter and rub in with fingers until mixture resembles bread crumbs. Add water and mix to form soft dough. Wrap in plastic and chill in fridge for 30 mins.
Roll out dough to fit 9 1/2 inch tart pan. Prick dough with fork. Line dough with foil and baking beans. Bake in oven preheated to 375 degrees for 15 minutes. Remove foil and baking beans and bake another 15 minutes.
Whisk cream, sugar, eggs, zest, and juice together. Place tart shell on cookie sheet and pour in filling. Bake 20 minutes or until just set. Remove tart from oven and dust lightly with confectioners' sugar. Decorate with fruit if using and serve.
