Ingredients
- 4 Tbsp butter
- 1/2 sleeve Ritz Crackers, crushed
- 1 pound thick cut cod loin
- 1/2 lemon, juiced
- 1/4 cup dry white wine
- 1 Tbsp chopped fresh parsley
- 1 Tbsp chopped green onion
- 1 lemon, cut into wedges
Preparation
Step 1
1. Preheat oven to 400 degrees
2. Melt 2 Tbsp butter in microwave to melt and mix into Ritz crumbs.
3. Place 2 Tbsp butter in a microwave to melt. Pour into a 7x11 inch baking dish.
4. Coat both sides of cod in melted butter in the baking dish.
5. Bake cod in the preheated oven for 10 mins. Remove from oven, top with lemon juice, wine and cracker mixture. Place back into oven and bake until fish is opaque and flakes easily with a fork, about 10 more minutes.
6. Garnish with parsley and green onion. Serve with lemon wedges.
