Cod Fish - Crispy baked

Ingredients

  • 1 cup Panko bread crumbs
  • 6 Cod Fish fillets
  • 2 Tbsp chopped parsley
  • 2 tsp grated lemon rind
  • 1 tsp minced garlic
  • 1 tsp salt
  • 2 Tbsp butter, melted

Preparation

Step 1

Combine Panko, parsley, lemon rind, garlic.
Place cod fillets on a lightly greased wire rack in a baking pan, sprinkle evenly with salt. Spoon breadcrumbs evenly onto fillets, pressing down gently, drizzle evenly with 2 Tbsp melted butter. Bake at 400 degrees for 17 mins or until fish flakes easily with fork.

Panko breadcrumbs can be substituted with Ritz Crackers.
