Hash-Brown Potatoes

Ingredients

  • 4 to 5 tablespoons vegetable oil
  • 4 cups coarsely shredded, peeled,
  • boiled baking potatoes (about 1 1/2
  • pounds raw potatoes)
  • Salt

Preparation

Step 1

1. In large skillet or on griddle, heat 2 tablespoons oil over medium-high heat. Add two l-cup mounds of potatoes, and with a large pancake turner, spread and form each into a rectangle, about 3/4 Inch thick.
2. Press the mounds to make the potatoes stick together; fry until the bottom is crisp-about 8 to 10 minutes. Sprinkle potatoes lightly with salt. Turn and brown other side, adding more oil if necessary. Transfer to serving plates and repeat to cook remaining potatoes.
