Ham & Potato Casserole

Ingredients

  • Cooking Spray
  • 6 c. shredded hashbrowns
  • 1 c. grated monteray jack cheese
  • 1 c. diced ham
  • 1/4 c. sliced green onions
  • 4 beaten eggs
  • 1 can (12 oz) evaporated milk
  • 1/4 tsp salt
  • dash of pepper

Preparation

Step 1

Spray 9X13 pan with cooking sporay. Spread hashbrowns in the bottom of the dish. Sprinkle with cheese, ham and green onion.

In another bowl, combine eggs, milk, salt and pepper. Pour over potatoes. Bake immediately or cover and freeze. If frozen, remove from freezer 24 hours ahead. Bake at 300 degrees for 45 min.
