PARMESAN CRUSTED TILAPIA

Ingredients

  • 4 tilapia fillets
  • 1/4 cup crushed ritz crackers
  • 1/4 cup grated parmesan cheese
  • 1 Tbs. Italian seasoning
  • 1 tsp. garlic powder
  • 3 Tbs. lemon juice
  • salt and pepper to taste
  • olive oil

Preparation

Step 1

Preheat oven to 425*. Thaw and rinse tilapia fillets if frozen. Pat dry. Combine crackers, parmesan, Italian seasoning and garlic powder in a small bowl and mix well.

Pour 1 tablespoon of lemon juice on a plate. Place a fillet in lemon juice, sprinkle with desired amount of salt and pepper. Turn fillet over in lemon juice and sprinkle seasoning on other side. Place fillet in parmesan mixture, patting it all over to coat. Put covered fillets in a foil-lined 9x13 pan. Sprinkle with a little lemon juice and drizzle or spray them with olive oil.

Bake about 20 minutes or until fillets easily flake with a fork and edges are browning.
