Turkey Cutlet with Roasted Red Peppers

Ingredients

  • 1 lb. turkey breast cutlets
  • roasted red peppers, rinsed and patted dry
  • 8-10 whole basil leaves
  • 4-5 slices mozzarella
  • salt and pepper

Preparation

Step 1

Season cutlets with salt and pepper.
On lightly greased grill, cook cutlets on one side about 3 min.
Turn over and place basil, peppers and cheese on one half of cooked side of cutlet.
Fold other half of cutlet over. Can be secured with toothpicks.
Cook 2 min. per side, or until done.
