Ingredients
- 1 1/2 c. sweetened flake coconut
- Zest and juice of 1 lime
- 2 tablespoons packed brown sugar
- 1 pineapple, peeled, cored and cut into thick wedges
Preparation
Step 1
Place coconut in a small skillet over medium heat. Cook until coconut is lightly golden and toasted. Transfer to a bowl.
Preheat grill to medium. In a small bowl, combine lime juice and sugar.
Oil grill. Put pineapple chinks on grill and cook, turning once, until softened and browned in spots. Transfer pineapple to dish and dot with lime juice mixture.
Sprinkle with lime zest and toasted coconut.
