SOUTHERN PECAN & BROCCOLI CASSEROLE

Ingredients

  • 14 oz white rice
  • 10 oz frozen chopped broccoli
  • 10 3/4 oz cream of mushroom soup
  • 10 3/4 oz cream of chicken soup
  • 1 onion, chopped
  • 1 medium tomato, chopped
  • 1/2 stick sweet butter, but into small cubes
  • 1/2 chopped pecans
  • 1/2 cup evaporated milk
  • 1/4 cup water
  • 2 eggs
  • Fresh Tarragon or Parsley for garnish

Preparation

Step 1

Prepare white rice and broccoli according to package directions. In a greased 9-inch casserole dish, combine cooked rice and broccoli with remaining ingredients. Bake at 350°F for approx. 20 minutes. Garnish with fresh tarragon or parsley.
