Broccoli with Herbs

Ingredients

  • 2 lbs. broccoli
  • 1 egg, hard boiled
  • Juice of 1 lemon
  • 6 tbs. olive oil
  • Salt and pepper
  • 2 tbs. each of chopped fresh chives
  • Parsley
  • 1 tbs. of chopped fresh chervil
  • 1 tbs. of tarragon

Preparation

Step 1

Wash 2 lbs. broccoli and discard the coarse stalks. Cook in gently boiling salted water for 10-15 min; until tender but crisp. Hard boil 1 egg, rinse in cold water; remove shell and separate the white and the yolk. Put the yolk in a blender, add the juice of 1 lemon and with the motor running, gradually add 6 tbs. olive oil. Season with salt and pepper. When emulsified, stir in 2 tbs. each of chopped fresh chives and parsley and 1 tbs. each of chopped fresh chervil and tarragon. Drain the broccoli arrange on a warm dish and pour over the sauce.
