Ingredients
- 1 1/2 pounds fresh asparagus
- 2-3 tablespoons olive oil
- 1 tablespoon toasted sesame oil
- 1 tablespoon grated fresh ginger root
- 1/2 cup coarsely chopped roasted
- cashews
- 1 tablespoon regular or reduced sodium
- soy sauce
- 1 tablespoon oyster sauce
Preparation
Step 1
Snap off and discard woody bases from
asparagus. If desired, scrape off the
scales. Cut asparagus diagonally into
2-inch pieces. Preheat wok or skillet over medium high heat; add oils. Stir-fry ginger root in hot oil for 30 seconds. Add asparagus and stir-fry for 3 to 4 minutes or until crisp-tender. Stir in cashews, soy sauce, and oyster sauce. Toss to coat evenly. Serve at once. Makes 6 servings.
