Ingredients
- 1 shallot, minced
- Salt and freshly ground black pepper to taste
- 1 teaspoon Dijon mustard
- 2 tablespoons red wine vinegar
- 1/3 cup Alvarez olive oil
- 1 1/2 pounds lightly blanched asparagus

Step 1
