Ingredients
- 1 cup pitted dates
- 1/4 cup extra-virgin olive oil
- 2 tablespoons lemon juice
- 1 teaspoon kosher salt
- Freshly ground black pepper
- 1/4 cup sliced flat-leaf parsley
- 2 tablespoons sliced cilantro
Preparation
Step 1
Thinly slice dates lengthwise. Toss the dates with the olive oil, lemon juice, kosher salt (or 1/2 teaspoon table salt)
and pepper to taste. Set aside half the mixture for the salad.
• Add half of the herbs. Wrap the remaining herbs in a damp paper towel, then plastic wrap. Refrigerate until ready to use for the salad.
