Cranberry Kumquart Compote

Ingredients

  • 1 pound cranberries
  • Rinds of 14 kumquats, pith removed,
  • julienne fine
  • Juice and zests of 1 lemon and 1 lime
  • 7/8 cup sugar

Preparation

Step 1

Combine all ingredients in a heavy. pot;
Bring to a boil, then simmer for about 10
minutes, stirring occasionally. Allow the
compote to cool to room temperature,
then chill. Serves 12.
