Ingredients
- 1 onion, diced
- 4 white rose potatoes, peeled and diced
- 7 ounce can whole green chiles, diced
- 2 tablespoons cooking oil
- 6 eggs
- 8 ounces jack cheese, shredded
- Green chile salsa
Preparation
Step 1
In a large covered skillet, saute onions until almost tender. Add potatoes and stir. Cover and cook, stirring occasionally until potatoes are tender. Add chopped chiles and eggs. Stir thoroughly. Continue cooking and stirring until eggs are set. Turn off heat, sprinkle cheese over omelet and cover pan. When cheese is melted, cut omelet into wedges and put on plate. Top with salsa.
