Ingredients
- Caramelized Almonds:
- 1 cup slivered almonds
- 6 T sugar
- Salad:
- 2 cups (3-4 chicken breasts) cooked chicken, diced
- 1 lb whole wheat Rotini pasta
- 4 stalks celery, chopped
- 1 small red onion, chopped
- 1 cup dried Craisins
- Dressing:
- 2 cups mayo
- 1/4 cup powdered sugar
- 2 T apple cider vinegar
- 2 T water
- 2 T poppy seed
- 2 tsp salt
Preparation
Step 1
1. In a small non-stick skillet, combine almonds and sugar over medium-low heat. Stir constantly until sugar dissolves and almonds are caramelized. Set aside.
2. In a greased baking dish, cook chicken breasts at 350 degrees for 30-40 minutes until cooked through. Cool and dice into 1-inch cubes.
3. Bring a large pot of salted water to a boil; cook pasta according to package directions; drain well and cool to room tempurature.
4. In a medium bowl, combine mayo, powdered sugar, vinegar, water, poppy seed and salt; mix well.
5. In a large bowl, combine almonds, chicken, pasta, celery, onion and Craisins. Add dressing mixture; mix well. Refrigerate up to 8 hours before serving.
