STREUSEL TOPPED SQUASH

Step 1

Cut one butternut squash into 1/2 in cubes, put in 11x7 microwavable dish and add 1/4 water and 1/2 tsp salt. Cover with plastic wrap, folding back one edge to vent. Microwave about 5 minutes or until crisp and tender. Meanwhile in medium bowl mix 1/3 c flour, 1/4 c packed brown sugar, 1/4 c choppped pecans, 2 tbsp softented butter, 1/2 tsp pumpkin pie spice, with spoon. Sprinkle evenly over squash. Bake uncovered 40 to 45 minutes or until streusel is brown.
