Leila's Apple Pie
By tjanddj
Nutrient dense
They taste like apples, have the texture of a soggy fig newton and smell like apple pie! You will swear that there is 2 cups of sugar...this is the yummiest!
Ingredients
- 4 large apples
- 3/4 cup Chia Seeds
- 1/2 tsp. All Spice (adjust to your taste)
- 1/2 tsp. Cinnamon (adjust to your taste)
- 1/2 cup water
- 1/4 cup chopped almonds, pumpkin seeds, cashews (optional)
Preparation
Step 1
Wash and cut apples up. Drop everything in high speed blender, except the nuts if you opted for these. Blend at high speed until the consistency of apple sauce. Add small amounts of water if necessary.
Hand mix nuts in.
Take a cookie sheet (I knew this thing would be good for something besides cookies)...lay way paper in the bottom to make clean up easy.
Sprinkle some Cinnamon & All Spice on the parchment paper (wax paper). I try and add ingredients that will have health benefits...so adding a little more All Spice & Cinnamon not only makes it taste better...it's good for you.
Spread your apple mixture about 1/2 inch thick across cookie sheet.
Preheat oven to 350°F. Bake for about 1 hour...every stove is different so check often to avoid burning. There is a fine line between too wet and burnt.
Then you can cut into squares and eat hot with a fork or you can refrigerate it it and eat it cold. I like eating it chilled best. It really firms up. Enjoy!
You get a healthy, fast , easy snack...my wife suggested adding oats...we have not tried it yet...but I bet it would be good!
