Spinach Artichoke Hummus

Ingredients

  • 1 (15 oz) can chickpeas
  • 2 tablespoons tahini
  • 1 garlic clove
  • juice of 1 lemon
  • salt and freshly ground black pepper
  • 1/4 cup extra-virgin olive oil
  • 1 (10 oz) box chopped frozen spinach, thawed and drained well
  • 1 (15 oz) can artichokes, drained and coarsely chopped
  • 1/2 cup grated Parmigiano-Reggiano or Asiago cheese

Preparation

Step 1

In a food processor, combine chickpeas, tahini, garlic, lemon juice, salt, freshly ground black pepper and olive oil, and puree until smooth. Transfer the hummus to a bowl, add the spinach, artichokes, grated cheese and mix to combine.
