Pork Loin with Tangy Mustard Sauce

Ingredients

  • Marinade:
  • 3 lb boneless Pork Loin Roast
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 1 tsp oregano
  • 1 tsp salt
  • 3/4 tsp black pepper
  • 6 cloves garlic, minced
  • 1 tsp ground mustard
  • 1/4 tsp ground ginger
  • Sauce:
  • 1/4 cup Dijon mustard
  • 1/4 cup horseradish
  • 1/2 cup apricot or pineapple preserves

Preparation

Step 1

Mix marinade ingredients together.

Put roast and marinade in a large ziplock bag. Refrigerate all overnight. Grill for 1- 1 1/2 hours at low temp or until internal temp is 155 degrees basting occasionally with sauce. Let set 10 minutes before slicing.

Serve with sauce.
