Ingredients
- Rub:
- 3 lb pork loin
- 1/2 cup Jack Daniels for marinade
- Dijon mustard
- 1/4 cup brown sugar
- 6 Slices of bacon
- 3 T salt
- 3 T pepper
- 3 T brown sugar
- 3 T paprika
- Basting:
- 1/2 cup Jack Daniels
- 1/4 cup butter
- 1/4 cup brown sugar
Preparation
Step 1
Split pork loin and lay open but don't pound. Add 1/2 cup Jack Daniels over meat and let marinade for at least 30 minutes.
Combine all rub ingredients.
Pat pork loin dry with paper towels and throw marinade away. Sprinkle rub ingredients into the inside of the loin. Spread thin layer of Dijon mustard on top of rub. Sprinkle 1/4 cup brown sugar over mustard.
Close up meat and take remaining rub and rub outside of meat.
Cut meat ties (string) and lay them on the counter. Lay 3 large pieces of bacon perpendicular over the ties. Lay the meat on top of the bacon. Put 3 more pieces of bacon on top of the meat and tie together.
Bake 325 degree's for 1 1/2 hours with internal temp reaching 155 degrees and basting every 15 minutes. Let stand 10 minutes before slicing
