Ingredients
- 1 c whole rye flour
- 1/4 c whole wheat flour
- 1/4 c jaggery & a drop of stevia
- 1 tbsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp cardamon
- 2 c Wheat Bran
- 1 c juice (pom)
- 1/4 c oil or egg substitute
- 1/2 c unsweetened applesauce
- 1/3 c fresh or frozen blueberries
- 1/3 c dried cranberries (soaked to hydrate)
Preparation
Step 1
Preheat oven to 400F.
Prepare 12 regular-sized muffin cups.
Stir together flour, jaggery, baking powder, baking soda, salt and spices. Set aside.
In a large mixing bowl, combine All Bran and juice. Let stand 5 minutes.
Add oil and applesauce, beat well.
Add flour mixture and stir until just combined.
Add berries and fold in.
Bake 20 minutes, or until tops spring back when touched.
