Ingredients
- 12 cremini mushrooms, cleaned
- 2 tsps extra virgin olive oil
- 1 1/2 tbs unsalted butter
- 2 cloves garlic, peeled and chopped
- 3 scallions( white and light green parts),chopped
- 1/2 cup seasoned bread crumbs
- 1/2 cup shredded cheddar cheese
- Salt and ground black pepper to taste
Preparation
Step 1
1. Preheat oven to 350
2. Remove the stems from the mushrooms amd trim the bottom end. Chop the stems and set aside. Place the caps round side down in a baking dish greased with olive oil
2. Melt the butter in a large skillet over medium heat. Add the garlic, scallions and mushroom stems, and cook until tender, about 5 minutes. Add the bread crumbs and stir to combine all the ingredients into the consistency of paste. Turn the heat down to as low as possible and add the cheese to the mixture. Mix the cheese until it is melted and combined with the other ingredients, including salt and pepper to taste. Remove skillet from heat. Stuff mushroom caps with the mixture. bake mushroom for 30 minutes. If the tops are not golden brown. put them back in for additional 5 minutes more
