Taco Soup ***

This is a quick and easy soup! Next time I'll omit the beans and add some elbow macaroni. I like the beans, but I'm the only one.

Ingredients
- 1 lb ground beef, cooked and drained
- 2 cans shoepeg corn
- 1 can Rotel(diced tomatoes w/green chilies)
- 1 cans drained pinto beans
- 1 tsp dry minced onion
- 1 package Ranch Dressing Mix
- 1 package taco seasoning
- salt and pepper to taste
- toppings: shredded cheddar,tortilla strips and sour cream
- Chicken stock to maintain desired consistency
- note:for tortilla strips,cut corn tortillas in half, then into thin strips and quick fry them in a little olive oil. Sprinkle with salt if desired.
Preparation
Step 1
Mix all and simmer at least one hour.
