Smokey Mac and Cheese

Ingredients

  • 2 tablespoons butter
  • 2 tablespoons flour
  • Mix into a roux and let turn golden brown, turn heat down to low
  • 1 cup warm (do not let it boil) milk
  • Add to roux stirring with a whisk constantly until it begins to thicken
  • Add cheese of your choice by the handful and mix to help it melt keep adding cheese until it is the desired "cheesiness"

Preparation

Step 1

Put 1 box of cooked elbow macaroni in a smoker safe container, cover with the cheese sauce (above), top with shredded cheese and bread crumbs (I add salt and pepper too)


Smoke for 1 hour then mix and smoke for another 1 to 1 1/2 keep your eye on it
