Jicama, Orange & Watercress Salad

Ingredients

  • 1 T wine vinegar
  • 2 T orange juice
  • 1 T honey
  • 1/2 t crushed anise seed
  • 1/4 t cayenne
  • 1/4 olive oil
  • 2 C julienned jicama
  • 4 oz. pimentos
  • 3 navel oranges, sectioned
  • 2 T chopped cilantro
  • 2 bunches watercress
  • Salt & pepper

Preparation

Step 1

Whisk together vinegar, orange juice, honey, anise seed & cayenne. Slowly whisk in olive oil til well blended. Season with salt & pepper
In large bowl, mix jicama, pimentos, oranges, cilantro & watercress. Season with salt & pepper. Add dressing, tossing well.
