Red Velvet Cupcakes Paleo

Ingredients

  • 1/2 cup coconut flour
  • 1/2 cup tapioca flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 3 Tbsp cocoa powder
  • 1 cup beet puree
  • 1/2 cup palm shortening OR grass fed butter
  • 3 eggs
  • 1/2 cup raw honey
  • 1 tsp vanilla
  • 2 Tbsp lemon juice

Preparation

Step 1

Preheat oven to 350 and prep cupcake tins.

1. In a large bowl, whisk together the coconut flour, tapioca flour, baking powder, salt and cocoa.
2. In another large bowl, mix the wet ingredients together, well; the beet puree, shortening, eggs, honey, vanilla and lemon juice.
3. Add the dry to the wet and mix well.
4. Fill the cupcake tins 2/3 full and bake for 20-25 minutes.
