Salmon and avocodo BLT

  • ciabatta rolls
  • bacon
  • 4 4oz salmon fillets
  • 1/4 c mayo
  • 2 t water
  • 1 t fresh chives
  • 2 t dijon
  • lettuce leaves
  • tomato slices
  • peeled and sliced avocado
  • lemon wedges

Preparation

Step 1

1) preheat broiler to high and broil ciabatta rolls til toasted

2) cook bacon in large skillet til crisp. remove bacon from pan. add salmon to the drippings and cook about 4 minutes per side.

3) combine mayo, water, dijon and 2 tsp of the chives in small bowl and whisk. spread mayo on bread, top with lettuce, tomato, bacon, avocado and fish fillet. sprinkle with remaining chives. serve with lemon wedges
